Gluten Free Banana & Dark Chocolate Bread Recipe

3 medium and very ripe bananas
2 eggs or Orgran No Egg
1/3 cup Milklab Almond Milk
1/4 cup Pure Harvest Organic Rice Malt Syrup or maple syrup
1 tsp Very Vanilla Extract
1 tsp cinnamon (optional)
Preheat oven to 180 degrees celsius and line a loaf tin with baking paper.
Mash the bananas and add to a blender along with the eggs, coconut oil, syrup, almond milk and vanilla and blend until smooth.
Pour the mix into a large bowl and add the dry ingredients, mix until just combined.
Pour mixture into the prepared loaf tin. This is where the Loving Earth dark chocolate is added, however you could also mix it into the previous step.
Bake for 60 mins, the first 30 mins with foil on top to not burn the chocolate, then remove foil and return to the oven for the last 30 mins.
Allow to cool in the pan and then cut into slices!
