Lamington Bliss Balls

Quick, easy and utterly delicious, these raw vegan bliss balls are the perfect treat!

INGREDIENTS

BLISS BALLS 
1 cup 2die4 Activated Organic Cashews 
1/3 cup Niulife Desiccated Coconut 
1/4 cup Pure Harvest Organic Rice Malt Syrup
2 tbsp Loving Earth Raw Organic Coconut Oil
1/2 cup whole raspberries (fresh or frozen) 

CHOC COATING
1/4 cup Loving Earth Raw Organic Cacao Butter 
1/4 cup Loving Earth Raw Organic Cacao Powder
2 tbsp Pure Harvest Organic Rice Malt Syrup
2 tbsp Loving Earth Raw Organic Coconut Oil 
2 tbsp Spiral Organic Coconut Cream  

1/2 cup Niulife Desiccated Coconut


METHOD:
1. To make the bliss balls, add the cashews and coconut to a food processor and whizz until they form coarse crumbs. 
2. Add rice malt syrup and coconut oil to the food processor and whizz until combined. 
3. Using wet hands, gently wrap about 2 tbsp of bliss ball mixture around each raspberry. Set aside in the freezer. 
4. Meanwhile, melt the coating ingredients in a small saucepan over low heat. If you're using store-bought chocolate, melt in the saucepan. 
5. When the balls are firm to the touch, remove from the freezer and dip each in the chocolate and then toss in the coconut. Set aside in the fridge for at least 10 minutes to allow the chocolate to set. 
6. Serve the bliss balls straight at room temperature. Store in the fridge or keeps in the freezer for a month!
