Healthy Oatmeal Banana Pancakes (Gluten Free & Vegan)

This is the PERFECT go-to pancake recipe. Made in the blender for ease, these gluten-free & vegan (if required) pancakes are super delicious yet completely virtuousStack them with layers of organic peanut butter and banana slices in between & finish with your favourite maple syrup

INGREDIENTS 

1 cup Inside Out Almond Milk

1 large egg* or equivalent of Orgran No Egg

1 teaspoon Chefs Choice Pure Vanilla Extract 

2 medium bananas

2 cups Four Leaf Tender Rolled Oats  or Orgran Brekki Quinoa Porridge (for gluten-free version)

1 tablespoon Organic Times Gluten Free Baking Powder

1/8 teaspoon salt

1/2 teaspoon Simply Organic Cinnamon (optional)

1 tablespoon butter, ghee or oil (for cooking)

 

TOPPINGS:

Savy Organics Peanut Butter

Banana slices

Niulife Flaked Coconut

Absolute Organic Maple Syrup 

 

Add all ingredients to the blender starting with milk and ending with salt (through cinnamon if using). Blend until smooth – some oat pieces will remain whole which is okay. Remove the blade from the blender.

Heat a large fry pan over medium heat; once the pan is hot add butter or oil.

Using 1/4 measuring cup, scoop batter and pour onto a pre-heated skillet. Be careful not to crowd. Cook the pancake on one side until the edges begin to bubble – about 3 minutes. Using a large spatula gently flip and cook for 2 minutes. Repeat with the remaining batter.

Transfer cooked pancakes to a warm oven before serving with your favorite toppings. Enjoy!
