Gluten Free Anzac Biscuits

Gluten-free Anzac Biscuits homemade! 

Ingredients:

  • 1 cup quinoa flakes
  • 1 cup gluten-free desiccated coconut
  • 1 cup gluten-fee almond flour or use another gluten-free flour of your choice)
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter or dairy-free butter alternative
  • 2 tablespoons golden syrup or honey
  • 1/2 teaspoon baking soda
  • 2 tablespoons boiling water

Instructions:

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the quinoa flakes, desiccated coconut, almond flour (or alternative gluten-free flour), and brown sugar. Mix well.
  3. In a small saucepan, melt the butter and golden syrup (or honey) over low heat until smooth.
  4. In a small bowl, dissolve the baking soda in boiling water, then add it to the melted butter mixture. It will foam up slightly.
  5. Pour the melted butter mixture into the dry ingredients and mix until well combined.
  6. Take spoonfuls of the mixture and roll them into balls, then place them onto the prepared baking sheet. Flatten each ball slightly with the back of a spoon.
  7. Bake in the preheated oven for about 12-15 minutes, or until golden brown.
  8. Remove from the oven and allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

With the substitution of quinoa flakes, you can enjoy gluten-free Anzac biscuits without oats.
