Gluten Free Anzac Biscuits

Gluten-free Anzac Biscuits homemade!
Ingredients:
- 1 cup quinoa flakes
- 1 cup gluten-free desiccated coconut
- 1 cup gluten-fee almond flour or use another gluten-free flour of your choice)
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter or dairy-free butter alternative
- 2 tablespoons golden syrup or honey
- 1/2 teaspoon baking soda
- 2 tablespoons boiling water
Instructions:
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the quinoa flakes, desiccated coconut, almond flour (or alternative gluten-free flour), and brown sugar. Mix well.
- In a small saucepan, melt the butter and golden syrup (or honey) over low heat until smooth.
- In a small bowl, dissolve the baking soda in boiling water, then add it to the melted butter mixture. It will foam up slightly.
- Pour the melted butter mixture into the dry ingredients and mix until well combined.
- Take spoonfuls of the mixture and roll them into balls, then place them onto the prepared baking sheet. Flatten each ball slightly with the back of a spoon.
- Bake in the preheated oven for about 12-15 minutes, or until golden brown.
- Remove from the oven and allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
With the substitution of quinoa flakes, you can enjoy gluten-free Anzac biscuits without oats.
