Raw Chai Cheesecake
This Chai Cheesecake is decadent, creamy and packed with nutrients, so your indulgence is guilt-free, and actually good for you! Vegan, Gluten-Free, Dairy-Free & Refined Sugar-Free.
INGREDIENTS
For Filling:
- 2 1/2 cups of Loving Earth Really Raw Organic Cashews (pre-soaked)
- ½ cup of Coconut Paradise Extra Virgin Coconut Oil
- ½ cup of Cecil Organic Coconut Cream
- 1/3 cup of Spiral Organic Maple Syrup (rice syrup or honey works too)
- 3 tsp of Alchemy Chai Elixir Syrup
For Base:
- 1 cup of 2die4 Activated Almonds
- ½ cup of dates
- ½ cup of 2Die4 Activated Organic Buckwheat
- 1 tbs of Coconut Paradise Extra Virgin Coconut Oil
- 1 tsp of cinnamon
- 1 tbs of Spiral Organic Maple Syrup (rice syrup or honey)
METHOD
- For the Base:
Add all almonds, dates, coconut oil, cinnamon & maple syrup to a food processor and blend into a crumb. Add buckwheat and pulse until combined. Press into a lined 22cm cake tin (or you can make individual portions as pictured) and leave to set in fridge. - For the Filling:
Add all ingredients into food processor and blend until it has a smooth consistency. Pour onto base and leave to set in the freezer for at least an hour. - Remove from the freezer 15 minutes before serving. Yum!
