Raw Chai Cheesecake

This Chai Cheesecake is decadent, creamy and packed with nutrients, so your indulgence is guilt-free, and actually good for you! Vegan, Gluten-Free, Dairy-Free & Refined Sugar-Free.

METHOD

  1. For the Base:
    Add all almonds, dates, coconut oil, cinnamon & maple syrup to a food processor and blend into a crumb. Add buckwheat and pulse until combined. Press into a lined 22cm cake tin (or you can make individual portions as pictured) and leave to set in fridge.
  2. For the Filling:
    Add all ingredients into food processor and blend until it has a smooth consistency. Pour onto base and leave to set in the freezer for at least an hour.
  3. Remove from the freezer 15 minutes before serving. Yum!
