Elderflower and Blueberry Mojito Mocktail

INGREDIENTS
Blueberry syrup:
- 150ml water
- 75gm organic blueberries
- 100g Lakanto Baking Blend Monkfruit Caster Sugar
For each mocktail
- 5 fresh mint leaves
- 2 tablespoon of blueberry syrup
- juice from 1/2 a lime
- 1 and 1/2 tablespoons of Ashbolt Elderflower Concentrate
- 150ml sparkling water
METHOD
- For the blueberry syrup, combine all the ingredients in a small saucepan and bring carefully to the boil. Reduce heat to a gentle simmer, and cook for 10 minutes. Allow to cool completely.
- To make each mocktail put 2 tablespoons of the blueberry syrup and 1 and 1/2 tablespoons of elderflower concentrate in the bottom of each glass, followed by the mint leaves. Muddle the syrup and leaves together. Add the lime juice, fill up the glass with ice then pour over the sparkling water. Give the drink a little stir and garnish with a little extra mint and some lime wedges. Enjoy!
