Lemon & Coconut Slice

This simple tasty treat will add sunshine to any day! Better yet, there is no baking required!
1/2 cup Pureharvest Organic Almonds,
1/2 cup pecans
1 cup medjool dates (about 10)
2 tbsps Pureharvest Rice Malt Syrup,
Zest of 2 lemons
1 cup cashews, soaked
1/4 cup Pureharvest Rice Malt Syrup,
Juice of 2 lemons
In a food processor blitz together the almonds, oats (or quinoa flakes) and pecans until they form a coarse meal. Add the dates, Rice Malt Syrup and lemon zest and process until they form a sticky mixture.
Press the mixture into the bottom of a 20 x 20 cm baking tray lined with baking parchment or cling film. Place the base into the freezer to set while you prepare the topping.
Place the cashews into the food processor and blitz on high speed for about 2 mins. Add the remaining ingredients and blend for a further few minutes until a smooth and creamy consistency is reached. Spoon the mixture onto the base and place back into the freezer to set.
Make sure you remove the slice from the freezer about 20-30 mins prior to serving.
