Creamy Hummus Pasta - Vegan & Gluten Free

INGREDIENTS 

1 x can Global Organics Chickpeas Organic, drained

3 tbsp Spiral Organic Hulled Tahini

2 tsp garlic powder

1 tsp Nirvana Organics Himalayan Crystal Salt

Juice of 1/2 lemon

1/3 to 1/2 cup of Toscana Premium Organic Extra Virgin Olive Oil or water

1/2 cup of frozen peas

250g packet of Orgran Gluten Free Multigrain Penne Pasta With Quinoa

Black pepper to serve

 

 

METHOD

In a pot, cook your pasta according to package instructions in well salted water. Add the fozen peas into the water for the last 2 minutes of your pasta cooking. Drain pasta & peas together and set aside.

Meanwhile, combine all the hummus sauce ingredients in a food processor.

Blend until smooth and creamy, adding more liquid to reach the consistency of a pasta sauce. (It should be more runny than your dipping hummus.)

Combine the sauce with the cooked pasta & peas. Serve with some cracked pepper (optional).
