Apple Crunch Log

1 x Packet of Leda Golden Crunch Biscuits 

1 x Well and Good Whipping Cream

Approx 1 kg Organic Pink Lady apples

1-2 tsp Cinnamon

1 x tablespoon Coconut Sugar 



Peel apples and cut into pieces removing the core. Place them in a saucepan with water (just covering the apples) and add both cinnamon and the coconut sugar.  Let them simmer until the apples are soft and mushy. (NB. You can add more water during cooking, if it is drying out. Once they are cooked, please set aside. 

Prepare the whipping cream, as per package instructions. 

Once the cream is thick and is forming soft peaks, it's time to assemble. 

Take a biscuit and place some cooked apple on the biscuit. Add a dollop of whipped cream to the apple and then another biscuit on top. Repeat this process, stacking all the biscuits together to form a log shape. 

You can then cover the entire log with extra cream. Place it in the fridge overnight and it is ready to serve.
